This recipe was inspired by the MN State Fair! It's easy and such a crowd pleaser.
Throw a roast in the crock pot in the morning.
In the evening, mash up some potatoes (or use instant if you prefer). Mix in plenty of cooked corn (drained, if you use canned).
Dish up some potatoes, and top with the tender, shredded roast. Top with a cherry tomato if you like! Enjoy. =)
